Fête du Bordeaux

K&L's annual Fête du Bordeaux will be held at One Market Restaurant in San Francisco on Sunday, January 20th, 2019. The guest line-up includes proprietors from Château Lynch-Bages, Langoa- and Léoville-Barton and Figeac. We will introduce the 2016 vintage of Figeac, Petit-Figeac, Mauvesin-Barton, Ormes de Pez, Langoa-Barton, Lynch-Bages and Léoville Barton during our 6PM tasting. Dinner will follow with special wines including the 2017 Blanc de Lynch-Bages, the 2004 and 2011 Figeac, the 2007 Langoa-Barton, the 2006 and 2001 Lynch-Bages and 2004 Léoville Barton. Today we see more bars using molecular gastronomy in their drinks and pushing the limits on what a cocktail is. In our class we will talk about the history of where molecular mixology came from. We will also be doing a number of different experiments and teaching you how to incorporate these into your bar at home. 

Molecular Mixology will cover making flavored foams for cocktails, as well as airs a much lighter style for topping cocktails and the science behind it. We will also be making cocktail spheres made with sodium alginate using a process called sphereification. How to naturally change colors of a cocktail using special ingredients. Also how to rapidly infuse ingredients into a spirit or cocktail. We will be taking all these techniques and incorporating them into cocktails that you will make in the class.

Mead Making Class

Make mead that is drinkable in one month! Traditional meads take a year (or more) to age and be drinkable, but meads can be made much faster. This process allows you to experiment with small batches, get results quickly, and repeat with a big batch of a particularly tasty recipe or honey. You will learn about yeast, what equipment you need, how to prepare must (unfermented mead), what flavors work well together, fermentation, sanitation, and bottling. You will learn how to use a hydrometer. There will be a tasting of some of Jim’s meads along the way. We will then make batches of mead in class to take home to ferment, if you choose! Be warned that making meads faster requires a more complicated recipe than traditional mead and more cooking science understanding, but this class is still accessible for beginners! The quick, reliable results are well worth the effort.

2019 California Rum Festival

Our team are the producers of the Puerto Rico Rum Fest "Taste of Rum", the Miami Rum Congress, New York Rum Festival and Chicago Rum Festival. All events attracting hundreds of people from trade, rum aficionados, tourists & locals.

Making Bitters

This workshop begins with a LECTURE on the history of bitters and medicinal herbs followed by a TASTING of different bitter tinctures. Explore the bitter flavor spectrum from common, local plants like artichoke leaf, dandelion root and citrus skin, as well as lesser-known plants like gentian, mugwort and yarrow. The second half of class is HANDS-ON, and we provide a buffet of dried herbs, roots and barks to CRAFT YOUR OWN bitter infususion to take home.
