Thanks to respectable establishments like Smugglers Cove, tiki bars are making a resurgence. One of my favorite tiki drinks is the relatively new Kaiteur Swizzle, created by Smugglers Cove founder Martin Cate. The Kaiteur Swizzle, named for the massive waterfall, requires a Guyanan blended aged rum, like El Durado. Alone, and too lazy to venture to the liquor store to buy some, I improvised and substituted Havana Club Añejo 7 Años a masterful Cuban rum, to create Fidel's Swizzle.

The drink would make the Cuban "president for life" quite proud.

Original Version

Martin Cate's Original from the Smugglers Cove book uses 2 oz blended aged Guyanan rum, and serves in a Collins glass, with crushed ice, garnished with a napkin wrap.
